- 8 small flour tortillas

- 1 cup red onion diced
- 2 cloves garlic minced
- 1/2 cup walnuts
- 1 15-ounce can lentils, drained and rinsed
- 1 tablespoon tomato paste
- 1 teaspoon ground cumin
- 1/2 teaspoon chili powder
- 1/2 teaspoon garlic powder
- 1/2 teaspoon dried oregano
- 1/4 teaspoon paprika
- 1/4 teaspoon crushed red pepper flakes
- 1 teaspoon salt
- 1/2 cup shredded red cabbage optional, for garnish
For the Pineapple Salsa
- 2 cups pineapple diced
- 1 cup red bell pepper diced (about 1 medium)
- 1/2 cup red onion diced
- 1/2 cup fresh cilantro chopped
- 2 cloves garlic minced
- 1 lime juiced
- 1/4 teaspoon salt
