Homemade Veggie Nugget ingredients

  • Chickpeas give the nuggets a hearty texture with extra protein and fiber.
  • Cauliflower and carrots are a great way to sneak in some extra veggies! They blend right in and help give the nuggets a soft, tender texture.
  • Sweet potato brings sweetness and color to this recipe. Make sure you cook it first! I usually cube and boil a sweet potato for about 10-12 minutes before tossing it into the food processor, but sautéing, baking, or steaming will also work.
  • Parmesan adds cheesiness and richness.
  • Eggs help bind everything together so the nuggets hold their shape. They also bump up the protein content and provide other key nutrients like choline!
  • Panko breadcrumbs absorb excess moisture and give the nuggets enough structure to shape and bake without getting dense.
  • Garlic powder, onion powder, and paprika add flavor and warmth without making the nuggets too spicy.
  • Olive oil is brushed onto the nuggets to help them crisp up in the oven.

How to serve these Homemade Veggie Nuggets

  • Serve with your favorite sauces for dipping — ketchup, ranch, or honey mustard are all great!
  • Add to a lunchbox with fresh fruit and veggies for an easy kid-friendly meal.
  • Stuff into a pita with lettuce, cucumber, tomato, and a creamy dressing for a tasty veggie nugget wrap.
  • Build a veggie nugget bowl with rice or quinoa, roasted veggies, avocado, and a drizzle of ranch or tahini sauce.
  • Make a snack plate with veggie nuggets, fruit, sliced veggies, cheese, and a dipping sauce.

Substitutions & variations

  • Cauliflower – You can swap in broccoli for a slightly different flavor and color, though it may be a bit more noticeable.
  • Sweet potato – Butternut squash or pumpkin can work in its place for a similar texture and subtle sweetness.
  • Parmesan – Swap in another finely grated hard cheese or use vegan parmesan instead.
  • Eggs – For a vegan version, ground flaxseed mixed with water may also work as a binder. However, I haven’t tested this substitution personally.
  • Panko breadcrumbs – Regular breadcrumbs can be used instead for a slightly different texture.
  • Seasonings – Feel free to adjust the garlic powder, onion powder, paprika, salt, and pepper to suit your taste. You can also add a pinch of Italian seasoning for a herby twist!
  • Olive oil – Avocado oil or another neutral cooking oil can be used for brushing the nuggets before baking. Alternatively, you can give them a quick spritz of cooking spray before you pop them into the oven.
  • Make mini nuggets – Use about 1 tablespoon of the mixture per nugget to make smaller bites that are especially fun for little ones.
  • Make them cheesy – Sprinkle in extra parmesan or mix in some shredded cheddar for a cheesier flavor.

Quick recipe tips

  • Let the mixture rest after adding the breadcrumbs; this gives it time to absorb some of the moisture, which makes the nuggets easier to shape.
  • Use a thin spatula and gently loosen nuggets from the parchment before flipping, as they may be a bit soft when they first come out of the oven.
  • Avoid blending the chickpeas completely smooth — a little texture helps hold them together and makes them more like nuggets.

Step-by-step instructions

  • Prep the oven: Preheat oven to 425°F and line a baking sheet with parchment paper.
  • Pulse the vegetables: Add cauliflower and carrots to a food processor and pulse until finely chopped.
  • Blend the mixture: Add chickpeas, sweet potato, parmesan, eggs, and seasonings. Pulse until mostly smooth but still slightly textured. Avoid over-processing.
  • Add breadcrumbs: Transfer to a bowl, stir in the breadcrumbs, and let sit for 5 minutes. If the mixture feels too wet, add 1 to 2 tablespoons more breadcrumbs.
  • Shape the nuggets: Scoop about 2 tablespoons of the mixture at a time and shape into about 16 nuggets. Arrange in a single layer on the baking sheet.
  • Bake until golden: Lightly brush the tops with olive oil. Bake for 12 minutes, carefully flip, then bake for another 8 to 10 minutes, until golden and lightly crisp around the edges.
  • Serve: Enjoy warm with ketchup, ranch, honey mustard, or your favorite dipping sauce.

Make ahead & storage

You can make these Homemade Veggie Nuggets ahead of time and keep them in the fridge or freezer for later. Here are a few tips to help them stay fresh and flavorful.

Meal prep

  • Prep the mixture: Make the nugget mixture up to 1 day ahead and store it covered in the fridge until you’re ready to shape and bake.
  • Bake ahead: You can bake the nuggets ahead of time and reheat them when you’re ready to serve.

Storing leftovers

  • Fridge: Store leftover nuggets in an airtight container in the fridge for up to 4 days.
  • Reheat: Reheat in the oven, air fryer, or microwave until warmed through.

Freezing

  • Freeze after baking: Let the nuggets cool completely, then freeze them in a single layer before transferring to a freezer-safe container or bag.
  • Freeze for up to 2 months: Store frozen nuggets for up to 2 months for the best quality.
  • Reheat from frozen: Reheat in the oven or air fryer until heated through and crisp around the edges. No need to thaw first!
