I think at this point it’s pretty clear that I’m a big fan of sweet potatoes. They contain a wealth of important vitamins and minerals, are rich in antioxidants and, basically, are just really delicious! But while sweet potatoes are pretty good all on their own, stuffing them up full of healthy ingredients to make veggie-loaded stuffed sweet potatoes make them instantly become even better.
I’ve made stuffed sweet potatoes a few different ways before, including my Scrambled Stuffed Sweet Potatoes and my Asparagus, Chickpea and Feta Stuffed Sweet Potatoes. Today, though, I wanted to mix it up and show you a few different ways to bring your sweet potato to the next level for a tasty meal that can double as a healthy side dish or nutritious main course.
How to Make Stuffed Sweet Potatoes
Before we get to all the delicious things you can put inside your veggie loaded stuffed sweet potatoes, let’s look at how to make them in just 30 minutes, using a few simple ingredients. Here’s how it’s done:
- Preheat oven to 450 degrees F.
- Rinse off sweet potatoes and cut in half length-wise.
- Place on a baking sheet with the cut side facing up.
- Drizzle each with a bit of olive oil and salt.
- Bake for 25-30 minutes, or until each potato is fork-tender.
- Remove and use a spoon to scoop out the middle. Reserve leftover sweet potato for later use.
- Start adding your fillings and enjoy!
Stuffed Sweet Potatoes: 3 Ways
Need some inspiration for how to start stuffing your spuds? Here are a few interesting ideas to help get you going. Feel free to get creative and adjust the amounts and ingredients as needed to fit your personal palate and whatever you have on hand. There are limitless ways to enjoy this nutritious dish and it’s practically impossible to mess up!
1. Greek Salad Stuffed Sweet Potato
Ingredients:
- Shredded Romaine
- Feta cheese
- Cucumber
- Red onion
- Olive oil
This delicious sweet potato combines two of my all-time favorite foods to create a fusion of flavors. It’s also super easy to make and requires minimal prep time in the kitchen. Just combine your ingredients in a small bowl–it’s totally fine to eyeball the amounts here–and start stuffing. A drizzle of olive oil at the end is all you need to top it off and enjoy.
2. Mexican Stuffed Sweet Potato
Ingredients:
- Black beans
- Corn
- Tomatoes
- Red onion
- Cilantro
- Jalapeño
Full of both flavor and fiber, this stuffed sweet potato puts a spicy spin on the classic recipe. Combine all the ingredients in a bowl, mix well and then load it into your spud. You can adjust the amounts based on your personal preferences–feel free to omit the cilantro if you’re not a fan and use less of the jalapeño to dial back on the heat as needed.
3. Cinnamon Stuffed Sweet Potato
Ingredients:
- Shredded spinach
- Brie cheese
- Apple
- Cinnamon-baked chickpeas
Out of all three of these veggie loaded stuffed sweet potatoes, this one does require the most preparation…but don’t let that stop you from giving it a try. While you’re roasting your sweet potatoes, toss some chickpeas in a bit of olive oil, cinnamon and sugar and then spread out on a tray. You can bake them at the same time as your sweet potatoes too, but be sure to take them out a little earlier (after about 15-20 minutes) once they’re nice and crispy. Then simply start stuffing and enjoy!
