It’s been a rough week here, mostly because I came down with a nasty respiratory infection over the weekend that kept me home sick from work and left me with a painful ear infection 🙁 Not fun.
On the bright side, I did get to binge watch Netflix, take lots of naps, and eat my weight in comfort food. So while I can’t really complain, I do have to admit that I’m excited that this week is already halfway over.
When I’m feeling sick, spending time in the kitchen (or anywhere besides bed or the couch) is the last thing I want to do. Of course, recovering from any illness does require good nutrition to help regain strength.
Today’s recipe may not be chicken noodle soup, but in my opinion, it’s the next best thing when you’re feeling sick and not up to cooking.
Introducing vegan sweet potato nachos! I’m a big fan of regular nachos and an even bigger fan of all things that involve sweet potatoes, so this recipe is a win-win for me.
Using sweet potatoes in place of chips adds a good chunk of beta-carotene, a form of vitamin A that acts as a powerful antioxidant. It also makes them even more delicious with just a hint of sweetness and adds a burst of color.
A few other super healthy ingredients in this dish include:
- Black beans: bring lots of protein and fiber to keep you full
- Tomatoes: lots of antioxidant-rich vitamin C
- Guacamole: full of heart-healthy fats from the avocados
The best part about this dish is that it looks like you’ve spent a lot of time in the kitchen whipping it up, but it actually takes very little preparation. Of course, baking the sweet potatoes can take some time as well as mixing up the guacamole, but for the most part, it’s just a lot of chopping veggies and compiling it into one big, delicious dish!

- 2 sweet potatoes
- 2 tbsp olive oil
- 1/2 cup black beans
- 1/4 cup corn
- 1/4 cup tomatoes, diced
- 1/4 cup red bell pepper, diced
- 1/4 cup red onion, diced
- 1 tsp chili powder
- 1/4 tsp garlic powder
- 1/4 tsp red pepper flakes
- 1/4 tsp paprika
- 1/2 tsp cumin
- 1/2 fresh cilantro (for garnish)
- 2 avocados
- 1/2 tsp garlic powder
- 1/4 tsp dried red onion
- 1/8 tsp cayenne pepper
- 1/4 tsp salt

- Preheat oven to 400 F. Cut sweet potatoes into thin, chip-like strips. Coat with olive oil and sprinkle with spices. Bake for 30-40 minutes, until cooked through and crispy.
- Make the guacamole by mashing two avocados and combining with garlic powder, dried red onion, cayenne pepper, and salt.
- Assemble sweet potato nachos by layering sweet potatoes, black beans, corn, tomatoes, red bell pepper, red onion, and guacamole. Garnish with fresh cilantro and serve warm.
