I have to admit I’m not much of a baker.
It’s not that I don’t like desserts…actually it’s just the opposite. It’s just that baking requires more precise measurements than cooking, it’s easy to mess up, and, to be honest, I just don’t have the self control it takes to have a giant chocolate cake sitting in the fridge and not eat it all in one sitting.
That’s why I’m all about healthy dessert recipes. I can eat just enough to satisfy my sweet tooth and not feel totally racked with guilt if I decide to have another.
Today I have a recipe that’s sweet, healthy, and easy to make. In fact, even the most novice of bakers can master this fool-proof recipe and feel good about enjoying every yummy bite.
This chocolate chip zucchini bread is incredibly moist and oh so delicious. It tastes like an indulgent treat and can easily fool even the most savvy of taste buds–you’d literally never believe that it’s loaded with nutrient-dense zucchini!
Zucchini is high in fiber, vitamin C, vitamin A, folate, and vitamin K, plus super low in calories. Dishing up a slice of this zucchini bread is the perfect opportunity to squeeze a serving of vegetables right into your dessert–and the perfect opportunity to have a second helping 😉
I also love this recipe because of how simple it is and how little room there is for error. There’s no sifting, folding, creaming involved here…just a lot of stirring, baking, and enjoying!

- 1 1/2 cup flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 1/2 cup zucchini, grated (about 1 1/2 zucchinis)
- 1/4 cup butter (melted)
- 1 egg
- 1/2 cup honey
- 1/2 cup maple syrup
- 2 tsp cinnamon
- 1/2 cup chocolate chips

- Preheat oven to 350 F.
- Mix together flour, baking powder, baking soda, salt, and cinnamon in a small bowl.
- In a medium bowl, mix melted butter with honey, maple syrup, and an egg.
- Slowly stir in dry ingredients with wet ingredients. Add in zucchini and chocolate chips and mix together well.
- Pour batter into greased 8-inch loaf pan. Place in oven and bake 45-50 minutes, or until toothpick comes out clean. Let cool 10 minutes before serving.
