Hi all! It’s been a little busy lately and I’ve found myself with limited time to do pretty much anything–including blogging.
The good news is that all of the things that have been keeping me busy have been good; I’ve been enjoying the beautiful weather, doing lots of spring cleaning, and spending plenty of time with friends.
Because of that, my time in the kitchen has been pretty limited also. In fact, most of the cooking I’ve been doing the past few weeks has been for the purpose of entertaining guests, so that means lots of fun, bite-size party foods!
The one I’m sharing today is extremely easy to make, super delicious, and perfect for enjoying with company.
I love all things caprese. Seriously, there’s nothing that beats that delicious combination. Caprese salads, caprese sandwiches, and now caprese puffs!
These puffs are ridiculously easy to make and they’re awesome for serving at a party because who doesn’t like caprese? It’s just as universally loved as a good cheese platter or a batch of cupcakes!
By using pre-made puff pastry cups, making this recipe gets even easier. You just pop them in the oven, let them bake, press down to create a dip in the middle, and let it cool before adding your toppings.
Besides being low in calories, these mini puffs are perfect for portion control. Bake a batch, have just a few, and enjoy! It’s a win-win for your taste buds and your waistline 😉
You can also switch this recipe up a bit to make it all your own. A bit of pesto on the bottom would be amazing or you could even try using a different type of dough, such as phyllo dough.

Ingredients

- Preheat oven to 400 F. Arrange puff pastry cups on baking sheet and bake for 20 minutes or until golden brown. Let cool for at least 10 minutes.
- Fill each cup with a small slice of mozzarella cheese, half a cherry tomato and a small piece of basil. Drizzle balsamic glaze on top of each cup and serve.
