Monday was the official first day of spring and the weather is finally starting to warm up! Let’s just hope it stays that way!
Besides the warm weather, I’ve noticed a few other changes in the air as spring begins….
I have to admit I’m not much of a baker.
It’s not that I don’t like desserts…actually it’s just the opposite. It’s just that baking requires more precise measurements than cooking, it’s easy to mess up, and, to be honest, I just don’t have the self control it takes to have a giant chocolate cake sitting in the fridge and not eat it all in one sitting….
It’s been a very eventful week here. My sister flew in all the way from Austin, Texas last Tuesday and the whole week was a whirlwind of eating tasty foods, walking all over the city, and playing tourist.
A few highlights include a long walk along the High Line, chowing down on some authentic Greek food in Astoria, brunching on Moroccan food, and countless hours spent wandering through art museums….
When I was 14, I started going to a dietitian. During the first six months or so into my eating disorder recovery, I made the visit every other week to see her, usually equipped with my diet recall in hand.
I still remember her advice to me, and it’s something I’ve carried into my own career as a dietitian–and my own everyday life….
I can remember the day I became a vegetarian pretty clearly. It was 5 years ago now–before I had even decided to become a dietitian and around the time my interest in nutrition was slowly starting to peak.
My older sister had already been a vegetarian for a few years at the time and I was finally at the point where my mom’s threats of “if you become a vegetarian, you have to cook for yourself” didn’t jolt me anymore.
So I set a date that was going to be day #1 of no meat…and then I drove to Panda Express and ordered orange chicken….
Peanut butter and chocolate is my absolute favorite combo. I don’t care what it is…if it has peanut butter and chocolate in it, I’m all about it.
Second on my list of favorite dessert combos is peppermint and chocolate. York peppermint patties have always been my mom’s favorite dessert, and I’m pretty sure it must be genetic or something….
For me, food is 50% about the taste and 50% about the presentation.
Now, Iāll admit that some of my absolute favorite foods donāt look so great on the plateāand thatās putting it nicely.
Indian food, for example, is one of my absolute favoritesā¦but it takes some good lighting and about 1,000 different shots to get one that does it justice.
Conversely, some of the most beautiful dishes simply donāt taste as good as they look. In fact, I had to make ratatouille a few times before I realized that I donāt actually like it all that muchā¦I just liked looking at it!
Finding a good middle ground can be tricky. But anytime I find a recipe that strikes that perfect balance between taste and presentation, I get pretty excited to share it.
Well, today I have a recipe that is both super tasty and a serious stunner on the dinner table.
Not only that, but itās packed with healthy ingredients that make it a rock star in terms of nutrition.
