BBQ Cauliflower Tacos with Avocado Cilantro Sauce
I feel like the only real preface this recipe for cauliflower tacos really needs is the glowing review I got from my boyfriend, one of the biggest meat lovers I know, who completely polished off his plate and said, “That was amazing. I didn’t even miss the meat at all.”
He generally likes everything I make (or that’s what he tells me at least), but this was a real compliment coming from him….

It’s been a rough week here, mostly because I came down with a nasty respiratory infection over the weekend that kept me home sick from work and left me with a painful ear infection 🙁 Not fun.
On the bright side, I did get to binge watch Netflix, take lots of naps, and eat my weight in comfort food. So while I can’t really complain, I do have to admit that I’m excited that this week is already halfway over….
