I’ll admit–I’m not a fan of winter in general; I hate the cold, I hate the snow and I hate the winter blues that always seem to roll around this time of year. On the plus side, though, when the temperatures drop, I find myself in the kitchen a lot more…usually huddled in front of the oven on those days when it’s cold and gloomy outside and the landlord still hasn’t turned on the heat for our building ;)…

Loaded Vegan Veggie Burger
Veggie burgers are awesome. Not only are they easy to make and sound pretty much 24/7, but they are also a great way to sneak a few extra servings of veggies into your day.
I confess that I usually have a pack of Morningstar spicy black bean burgers sitting in my freezer for when nothing else sounds good or I’m in a rush and need to eat something fast….
Chickpea Curry with Veggie Rice
Indian food is one of my favorite types of cuisine. I love the spices, the flavors and, of course, the fact that it’s super vegetarian-friendly.
However, Indian food can be hard to make at home. If you don’t have access to an extensive collection of spices, replicating that characteristic Indian taste can be close to impossible. In fact, I can’t tell you how many times I’ve tried whipping up my favorite Indian dishes at home only to be left disappointed by the lackluster flavor….
Rainbow Breakfast Skillet
So I recently started a new job that’s basically like my dream job. I ended up leaving another job that I actually really liked and enjoyed because this one offered me a chance to do something I really love: write about nutrition.
In addition to giving me the opportunity to follow one of my passions, it also allows me to work from home. That’s right–no more waking up before the sun has even risen, taking an hour-long train ride into the Bronx, cramming onto a packed train during rush hour and then coming home totally exhausted just from the commute alone….
Scrambled Stuffed Sweet Potatoes
Breakfast is my favorite meal of the day…or it at least definitely makes it into the top 3 😉
That being said, it can be easy to get into a rut when it comes to breakfast. It’s all too easy to stick to a few breakfast classics on rotation: oatmeal, yogurt, omelettes, repeat….
Three Bean Vegan Chili
So just when I thought things would finally start to calm down and I would be able to breathe again, things got even more crazy.
I have a jam-packed schedule for the next four weeks, with a vacation, a surgery, a visit from my parents, and plenty of work-related stressors all looming over me….
Mini Chickpea Pot Pies
It’s been a fabulous week here, with temperatures rising up just enough to finally leave the coats at home. Plus, most schools are out here this week, which means empty trains and a nice, quiet commute.
I have to admit that I’ve been trying to enjoy the weather, spending less time in the kitchen and more time outside whenever possible….
Tempeh Broccoli Breakfast Skillet
Hello everyone and happy April! This is one of my favorite months because the sun finally starts poking its head out every once in a while, it’s finally nice enough to do things outside again, and some of my favorite fruits and veggies start to come back in season….
