Vegan Sweet Potato Nachos
It’s been a rough week here, mostly because I came down with a nasty respiratory infection over the weekend that kept me home sick from work and left me with a painful ear infection 🙁 Not fun.
On the bright side, I did get to binge watch Netflix, take lots of naps, and eat my weight in comfort food. So while I can’t really complain, I do have to admit that I’m excited that this week is already halfway over….
