We all know that bruschetta is good all on its own. After all, there are very few things in life better than good bread paired with ample amounts of garlic and olive oil. Throw in some toppings like cheese or tomatoes and it gets even better.
This breakfast bruschetta takes it to another level, though. Crispy, warm baguette slices topped with pesto, scrambled eggs, mozzarella and tomatoes…need I say more?
This dish is super easy to make, so there’s no recipe needed. Just scramble up an egg, slice your baguette and add your toppings in whatever order you’d like. I went with pesto followed by a slice of fresh mozzarella, egg and tomatoes on top, but feel free to mix it up and use whatever you have in the fridge.
Onions, basil, avocado, bacon, poached eggs, spinach or cream cheese are just a few other equally drool-worthy options that you can try.
I made this on a day when I had a friend coming over in the morning. It’s the perfect finger food and makes it look like you spent tons of time slaving away in the kitchen, even though it comes together in under 15 minutes.
Whip up this breakfast bruschetta as the perfect side dish to some of my other breakfast favorites–it would be a great addition to a tempeh broccoli breakfast skillet, for example, or alongside a colorful fruit salad.
