Vegan Greek Salad Sandwiches

These Vegan Greek Salad Sandwiches layer crisp veggies, briny olives, and herby flavors for an easy and satisfying meal. Stuff it into your favorite bread or pita, then turn any extra filling into a delicious salad for round two!

Ingredients

  • 2 cups romaine lettuce or romaine salad mix
  • ½ large English cucumber diced (about 1 cup)
  • ½ cup cherry tomatoes
  • ¼ cup kalamata olives
  • 1 tablespoon capers
  • cups vegan chicken I used Abbot's Chopped Chick'n
  • ½ cup vegan feta
  • ¼ cup parsley
  • 4 sub rolls or other bread of choice

Dressing

  • ¼ cup olive oil
  • ¼ cup red wine vinegar
  • 1 teaspoon dijon mustard
  • 2 garlic cloves minced
  • ½ teaspoon dried oregano
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Instructions

  • Add the ingredients for the dressing to a jar or bowl. Whisk together and set aside.
  • Chop the romaine lettuce, cucumber, tomatoes, olives, and parsley. Add to a large mixing bowl, along with the capers and vegan feta.
  • Cook the vegan chicken according to the directions on the package. Add to the mixing bowl with the other salad ingredients.
  • Whisk the dressing again and then pour over the salad. Toss everything together to combine.
  • If desired, toast the bread. Add a few scoops of salad filling to each sub, pita, or slice of bread just before serving.

Notes

Depending on the size of your sub rolls, bread, or pita and how generously you fill your sandwiches, you may have some salad filling leftover. Don’t let it go to waste! Enjoy it on its own as a Greek-inspired salad or spoon it over extra romaine.
