Ingredients
1cupuncooked basmati ricerinsed
2tbspolive oil
3clovesgarlicminced
1 1/2cupswater
2limeszested and juiced
1/3cupcilantrochopped

Instructions
Rinse the basmati rice under cold water until the water runs clear. Set aside.
Heat the olive oil in a pot over medium heat. Add the minced garlic and cook for 1-2 minutes, stirring frequently.
Add the rinsed rice and stir to coat it in the garlic oil. Cook for 1-2 minutes to lightly toast the rice.
Add the water, lime zest, lime juice, and a pinch of salt. Stir to combine.
Bring to a boil, then reduce heat to low, cover, and simmer for about 15-18 minutes, or until the rice is tender and the liquid is absorbed.
Remove from heat and let sit covered for 5 minutes.
Fluff the rice with a fork and gently stir in the chopped cilantro. Serve warm.
