Roasted Radishes

Roasted radishes are a simple side dish that transforms peppery radishes into tender, slightly sweet vegetables with golden edges.

Ingredients

  • 1 bunch radishes or 1-2 cups
  • 1 tbsp olive oil
  • 1/2 tsp garlic powder
  • salt
  • pepper

Instructions

  • Preheat the oven to 425°F and line a baking sheet with parchment paper.
  • Wash the radishes, remove the greens, and trim the ends. Cut larger radishes in half or quarters so the pieces are roughly the same size.
  • Place the radishes in a bowl and drizzle with olive oil. Add spices and toss until evenly coated.
  • Spread the radishes in a single layer on the prepared baking sheet. Roast for around 20-25 minutes, until tender.
  • Serve warm as is, or finish with optional toppings such as grated parmesan, chopped parsley, or a squeeze of fresh lemon juice.
