Roasted Radishes
Roasted radishes are a simple side dish that transforms peppery radishes into tender, slightly sweet vegetables with golden edges.

- 1 bunch radishes or 1-2 cups
- 1 tbsp olive oil
- 1/2 tsp garlic powder
- salt
- pepper
Preheat the oven to 425°F and line a baking sheet with parchment paper.
Wash the radishes, remove the greens, and trim the ends. Cut larger radishes in half or quarters so the pieces are roughly the same size.
Place the radishes in a bowl and drizzle with olive oil. Add spices and toss until evenly coated.
Spread the radishes in a single layer on the prepared baking sheet. Roast for around 20-25 minutes, until tender.
Serve warm as is, or finish with optional toppings such as grated parmesan, chopped parsley, or a squeeze of fresh lemon juice.
