Ingredients

  • 8 ounces block feta cheese
  • 1/2 cup plain Greek yogurt
  • 3 medium roasted beets peeled and roughly chopped
  • 2 garlic cloves
  • 1 small lemon juiced (or about 2-3 tablespoons)
  • 2 tablespoons olive oil
  • 2 tablespoons chopped fresh dill plus more for garnish
  • freshly ground black pepper to taste
  • pistachios chopped (optional, for garnish)

Instructions

  • Add the feta, Greek yogurt, roasted beets, garlic, lemon juice, olive oil, and fresh dill to the bowl of a food processor. Blend for 2 to 3 minutes, stopping to scrape down the sides as needed, until the mixture is completely smooth and creamy.
  • Taste and add a little more lemon juice for extra brightness or freshly ground black pepper if desired. The feta is typically salty enough that additional salt isn't necessary.
  • Transfer the whipped feta to a shallow serving bowl or plate. Garnish with extra fresh dill and chopped pistachios, if desired.
