Ingredients

  • 1½ cups quick oats
  • ¾ cup pumpkin puree
  • ¼ cup creamy peanut butter
  • ¼ cup dairy-free mini chocolate chips
  • 2 tablespoons maple syrup
  • ¼ cup flaxseeds
  • ½ cup vegan vanilla protein powder
  • 2 teaspoons pumpkin pie spice
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg

Instructions

  • In a large bowl, mix the oats, flaxseeds, vanilla protein powder, pumpkin pie spice, cinnamon, and nutmeg.
  • Stir in the pumpkin puree, peanut butter, and maple syrup until combined.
  • Gently mix in the mini chocolate chips.
  • Refrigerate for 20-30 minutes to make the mixture easier to handle. This is optional, but recommended if you have enough time.
  • Scoop out about 2-3 tablespoons of the mixture at a time using an ice cream scoop or spoon and roll into balls using your hands.
  • Enjoy immediately, or refrigerate in an airtight container for up to 5 days.
