Ingredients
4cupspeeled and cubed Russet potatoes(about 2-3 medium potatoes)
2cupscauliflower florets
1cupcannellini beansdrained and rinsed
½cupplain Greek yogurt
2tablespoonsolive oil
3clovesgarlic
1⁄4cupmilkplus more as needed
1teaspoonsaltplus more for boiling the potatoes and cauliflower
1⁄4teaspoonblack pepper
chivesoptional, for garnish
Instructions
Add the potatoes to a large pot and cover with water. Add a generous pinch of salt and bring to a boil. Cook for 15-20 minutes, or until fork-tender. Drain well, then let sit for 1-2 minutes to allow excess moisture to evaporate.
Add the cauliflower to a separate pot and cover with water. Add a pinch of salt and bring to a boil. Cook for 8-10 minutes, or until tender. Drain well.
Add the cooked cauliflower, cannellini beans, Greek yogurt, olive oil, garlic, salt, pepper, and milk to a food processor or blender. Blend until smooth and creamy, adding another splash of milk if needed.
Mash the potatoes with a fork or potato masher until mostly smooth. Add the cauliflower-bean mixture and gently stir or mash until well combined.
Taste and add more salt, pepper, or milk as needed. Garnish with fresh chives and serve warm.
