BBQ Tempeh Bowls with Grilled Zucchini and Pineapple Salsa

Ingredients

  • 2 8-oz blocks tempeh sliced crosswise into 1/2-inch-thick strips
  • 1/2 cup barbecue sauce
  • 2/3 cup uncooked quinoa
  • 1 1/3 cups water or vegetable broth
  • 1 cup cherry tomatoes halved
  • 1 cup fire-roasted corn thawed if frozen
  • 1 medium zucchini sliced into rounds (about 1 1/2 cups)
  • 2 tbsp olive oil divided
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1/2 batch Green Goddess Yogurt Dressing or sub store-bought

For the pineapple salsa

  • 1 cup pineapple diced
  • 1/2 cup medium yellow bell pepper chopped
  • 1/4 cup red onion finely diced
  • 1/2 cup cilantro chopped
  • 1 lime juiced
  • 1/4 tsp salt

Instructions

  • Add the quinoa and water (or broth) to a small saucepan. Bring to a boil, then reduce the heat, cover, and simmer for 12-15 minutes, or until the liquid is absorbed. Remove from the heat and let stand for 5 minutes. Fluff with a fork.
  • To make the BBQ tempeh, heat 1 tbsp olive oil in a large skillet over medium heat. Add the tempeh in a single layer and cook for 3-4 minutes per side, until lightly browned. Reduce the heat to low, add the barbecue sauce, and stir to coat. Cook for 1-2 minutes more, then remove from the heat.
  • Brush both sides of the zucchini rounds with the remaining 1 tbsp olive oil. Arrange in a single layer on a grill pan or griddle over medium-high heat. Cook for 2-3 minutes per side, pressing lightly with a spatula to create grill marks. Transfer to a plate and season with the salt and pepper.
  • Make the pineapple salsa by stirring together the pineapple, bell pepper, red onion, cilantro, lime juice, and salt in a medium bowl. Set aside.
  • Divide the quinoa among 4 bowls. Top with the BBQ tempeh, grilled zucchini, cherry tomatoes, corn, and pineapple salsa. Drizzle with the Green Goddess Dressing and serve.
