Vegan Kimchi Fried Rice

  1. To make the rice, add 4 cups of water to 2 cups of white rice over high heat and cover. Bring to a boil, then reduce heat and simmer until most water is absorbed, about 15-18 minutes.
  2. While the rice is cooking, cut the tofu into 1″ cubes and add to a skillet over medium heat. Allow tofu to sear 3-5 minutes on each side until golden. Then add 1/4 cup of soy sauce and continue cooking another 3-5 minutes, flipping occasionally to coat both sides evenly.
  3. Add 2 tbsp of olive oil to a pan over medium heat and add chopped broccoli and onions. Cook for 2-3 minutes, stirring occasionally until broccoli and onions are cooked.
  4. Add cooked tofu to the pan along with rice, chopped kimchi and soy sauce. Mix thoroughly and cook for an additional 5 minutes, stirring occasionally.
  5. Serve topped with cilantro and sliced avocado and enjoy.
