Rainbow Breakfast Skillet
Equally full of both color and flavor, try whipping up this tasty breakfast skillet next time you have a few minutes to spare in the morning.

Instructions
  1. Heat olive oil in skillet over medium heat and tilt skillet to distribute evenly.
  2. Add garlic, onion and sweet potato to skillet and cook, stirring occasionally, for 5-7 minutes, until sweet potato is slightly browned.
  3. Add zucchini, bell pepper and tomatoes to the skillet and cook an additional 3-5 minutes, continuing to stir.
  4. Use spatula or spoon to move vegetables and create three small gaps for the eggs to cook. Crack eggs into the skillet and allow to cook until egg whites have set and yolks have reached desired doneness.
  5. Season with salt, pepper, turmeric and fresh parsley and enjoy!
