Happy hump day! It’s been a rough week here, mostly because I came down with a nasty respiratory infection over the weekend that kept me home sick from work and left me with a painful ear infection 🙁 Not fun.
On the bright side, I did get to binge watch Netflix, take lots of naps, and eat my weight in comfort food. So while I can’t really complain, I do have to admit that I’m excited that this week is already halfway over.
When I’m feeling sick, spending time in the kitchen (or anywhere besides bed or the couch) is the last thing I want to do. Of course, recovering from any illness does require good nutrition to help regain strength.
Today’s recipe may not be chicken noodle soup, but in my opinion, it’s the next best thing when you’re feeling sick and not up to cooking.
